Polenta Pie

Polenta? What is polenta? I will tell you audience. Polenta is essentially coarsely ground cornmeal however historically it was derived from other grains. I've never even heard of never-the-less tried it until I met my husband when he would make it. We don't have it too often, until recently when I remembered we used to to eat it when we first started dating so I grabbed up a couple of portions during our last grocery shop.
Today I want to share with you our delicious vegan polenta pie recipe that is so incredibly simple to make. With that, let's get started!
Ingredients:
1 portion of polenta
1 can of whole peeled tomatoes (I prefer to use these and blend them as opposed to using tomato paste for it has less sugar)
1 packet of vegetarian sausages (I use the "Beyond Meat" brand)
Vegan parmesan cheese
Chopped basil (for garnish) and added seasonings of choice
Directions:
-Preheat oven to 425 F.
- Remove the polenta from packaging and in a food processor or blender, blend the polenta along with any seasonings (salt, pepper, garlic, oregano) until becomes a dough.
-Place the polenta in a greased skillet and smoothe around all edges; cook the polenta on the stove top on low-medium heat until it starts to get crispy (does not to be fully cooked for it will go in the oven).
-While polenta is cooking, dice the meat-less sausages and blend the whole peeled tomatoes along with seasonings of your choice (basil, oregano, garlic); in another skillet, slightly cook the "sausages" until they have a nice sear.
-Once the polenta is crisp, pour tomato sauce onto polenta and top with the vegan parmesan cheese and "sausages"; cook in the oven for 10-15 minutes or until cheese starts to melt.
-Once finished, take out of the oven and add basil for garnish and added flavor.
-Enjoy!
