Sweet as Pie

What better way to celebrate the fourth of July than with a cook out and a delicious pie for dessert? Even better, that pie is apple pie. Apple pie has become the staple in American households to celebrate our Independence Day and the time of giving thanks. I am a big fan of pie, in fact so much so that for my 16th birthday I had several different types of pie including, you guessed it, apple. My absolute favorite apple pie is of course my mother's apple pie with a crumble top, which she only makes once a year on Thanksgiving. On the downside, I'm SO bloated and lethargic after I eat it (although that could be due to all the food eaten on Thanksgiving...I'll go with that) that I feel guilty and torture myself mentally for eating something that I enjoy (which makes absolutely no sense but this topic is for another time). This apple pie, while still being delicious, has half the sugar that other apple pie's have and it doesn't make me feel as lethargic. This recipe was actually given to us by a good friend of my husband's so major shout out to this person for such an amazing recipe!


Pie crust

-10" pie plate

-1 cup shortening

-2 2/3 cup all purpose flour

-1 tsp salt

-7-8 tbsp cold water

Pie Filling

-1/2 cup sugar

-1/3 cup all purpose flour

-1 tsp nutmeg

-1 tsp cinnamon

-1 dash of salt

-4-7 medium Honeycrisp apples (sliced)

-3 tbsp unsalted, melted Kerrygold (we used vegan) butter


Pie Crust

-Mix the flour, salt, and shortening

-Add cold water 1 tbsp at a time and mix with a fork until dough is moistened

-Divide the pastry in half

-Sprinkle flour out on a clean surface and roll half of the pastry out until it's 2" larger than the pie plate

-To find center of alignment, fold the pastry in half vertically, unfold, then fold in half the other way horizontally and unfold

-Align the center of the pie plate and smooth out into the bottom and the sides

-Re-flour the surface and roll out the other half of the pastry for the lattice crust. Roll out until 2" larger than pie plate, then cut into 1" strips; set aside.


-Mix sugar, flour, nutmeg, cinnamon, and salt

-Add melted butter and apple slices to dry mix and stir

-Pour mixture into crusted pie plate

Lattice Crust

-Take the set aside strips, take 4-5 strips and place vertically across pie filling (trim off any excess ends)

-Take each remaining strip and weave in between each vertically laid strip

-Apply a thin layer of butter on top


-Preheat oven to 350 degrees

-Take aluminum foil and place around the top edge of the pie plate (helps prevent burning on the top layer of the crust)

-Bake for 1 hour, after 45 minutes take off the aluminum foil
